Employer: Noctua Bread Company Inc.Position:NOC:632021 Permanent, full-time position.Wage:$23.00 per hour. 44 hrs work per week. 8-10 hours a day starting at 4:00 a.m.Address of Work:3014 Dundas Street West, Toronto, Ontario M6P 1Z3Job description: Prepare dough for pies, bread, rolls and sweet goods, batters for muffins, cookies, and cakes. Scaling, mixing, shaping, portioning, and baking of artisanal sourdough breads including buns, pizza & focaccia, and lamination of classical viennoiserie. Bake mixed doughs and batters. Ensure quality of products meets established standards. Draw up production schedule to determine type and quantity of goods to produce. Purchase baking supplies. Oversee sales and merchandising of baked goods. Train and supervise baking personnel and kitchen staff. Job requirements: Completion of secondary school. 3 to 5 years of commercial baking experience. Artisanal baking experience and training in Mexican and South American specialty baked goods, savoury foods, and desserts. Skills: Must be able to work within a team environment as well as independently (unsupervised) with a positive attitude and exceptional work ethic. This position requires finesse and accuracy in technical skills including scaling bread recipes, lamination, and experience with preparing fine custards and creams. The position requires heavy lifting (must be able to lift 50lbs bags), bend & twist, and stand for long periods of time.
